de Castilla. Grape Varieties: 40% Tempranillo, 40% Syrah & 20% Cabernet Sauvignon. Alcohol Content: 13%. Ageing: Aging: 3 months in French oak (Allier, medium toast, 100% new). Winemaking: Fermentation at 25oC with natural yeast. Total maceration of between 25 and 28 days. Malolactic fermentation in French oak barrels followed by three months of aging. Total Acidity: 5,60 gr/l. pH: 3,50.
